Madeline Kamman Culinary Book Scholarship
This scholarship is for students in the Culinary Program. Students must demonstrate need and have a 3.0 cumulative GPA. Students are eligible after their first semester at CFCC. Preference will be given to a female student. The funds are to be used to assist with Book and Textbook purchases.
GRANDE DAME CHEF MADELEINE KAMMAN is credited with bringing French cooking techniques to American chefs via her four star French restaurant Chez la Mere Madeleine, her PBS cooking show Madeleine Cooks and her three cooking schools; The Modern Gourmet-Boston, The Modern Gourmet-Annacey and the famed School for American Chefs at Beringer Vineyards know as the graduate school for American Chefs. Kamman received France’s highest honors including the Chevalier Award and Knighthood of the Orders des Arts des Lettres as well as Lifetime Achievement Awards from the James Beard Foundation, Les Dames d’Escoffier and the International Association of Culinary Professionals. She is the author of seven award winning cookbooks including the James Beard Book of the Year.
Kamman believed that preparing a meal properly, and teaching chefs how to do so, required an all-encompassing knowledge. Chefs, she would say, need to understand the science of how ingredients mix; the history, geology, and topography that produce a region’s cuisine; the creativity a kitchen affords; and the harsh practicalities of managing a restaurant.
Is there an art more complete than the one we are teaching?” she asked in a 1985 Globe interview. “More than any other art, cooking is a complete art, one that will involve the stamina of your body and the tenderness of your heart, balanced by the intellectual capacity of your brain."

CFCC Culinary Instructor Gwen Gulliksen is a graduate of Kamman’s School for American Chefs and was gifted Kamman’s extensive cookbook collection. She started this book scholarship in her mentor and friend’s honor and has created an on line book store of Kamman’s cookbooks to help to help fund the scholarships.
